Gorgeous Christmas cakes Auckland

Soaking fruit for Christmas CakeMy mum used to make gorgeous Christmas cakes full of threepences and sixpences and I have been making gorgeous Christmas cakes for years as well. The first cake I ever made was when I was 21 years old and a lovely lady called Maureen, who lived on the hill above the farm I was on, gave me her recipe. It was a very big cake, and I used to encourage any visitors or children to help stir it when I was making it because I was told it was good luck (and I think it was). Over the years I have made many Christmas cakes, for family , and sometimes for special friends. (I had an old friend who used to hide in strange places to eat my cake because he wasn’t supposed to have too much).Christmas cake full of dried fruit.
9 years ago I started The Little Cake Kitchen and I used the same wonderful recipe to supply places like Farro Fresh and Didas Food Store. I no longer own LCK so this year I have decided to make a different cake. I love making sugar flowers and I have discovered a wonderful cake artist called Alan Dunn and I am using his recipe (just tweaked here and there!). It’s got a wonderful flavour because it has an abundance of delicious dried fruit which have been soaked in brandy for over a week. Then the cake has been mixed with lots of love and care, and butter and almond meal and spices and then baked very slowly (trick to making a gorgeous christmas cake). And then when it is all golden and gorgeous it has more brandy drizzled over it!
Somehow, I really liked the idea of using white icing on the cakes. I discovered some wonderful old Cordon Bleu monthly cookery books in the garage. I was going to throw them away but they are full of lots of wonderful old recipes. There was a special edition for Christmas and a fine recipe for almond paste – it is so yummy – it has a lovely subtle flavour and tastes perfect with the fondant, the gorgeous cake and the brandy! So I iced some cakes and then I thought it would be nice to decorate them with vintage-sytle wreaths made from my sugar flowers.Gorgeous Christmas cake with burgundy wreath
